I don't understand how well does this represent a plant, how exactly are the notes being "translated" into music? They said they measured difference in resistance, but how do they use those values? Do they play random notes depending on the resistance? What part of the sounds is being played by a person (i think they mentioned using a piano at least for Sounds from the Soil), so could it be that the measure of resistance is just noise signals from the vibrations heard from the piano? Is that why she thinks the plant "reacts", because something happens when the piano is played?

That's not exactly an impressive feat. The plant's music is, but beating the msm industry in terms of quality is the first step into having good music. Music itself is a type of spellcraft, and the msm industry literally designs music starting with audio engineers that synthesize "music" that's designed to be simplistic which possesses narrowly defined traits. As said, music being a type of spellcraft, spells that impose a level of influence on the listener, songs designed to reinforce thinking patterns according to a design - the result is manufactured auditory influence.

Ok so here is a counter-experiment: Just stand next to the plants and shout at them, see what kind of noise they produce. Alternatively, change the location of the clamps that you attach to the plant, to different parts of the plant to see if there are differences in the sounds.
